All tamales and prepared masa arrive frozen and packed with dry ice/gel packs in recyclable insulated boxes. We ship Tuesdays
and Wednesdays via Federal Express 2nd Day Air. Shipping costs vary depending on your location and package weight.
We ship dry goods via USPS Priority Mail with Delivery Confirmation. There is a $12 shipping charge per steamer and a $13
shipping charge for one or two 5-lb bags of masa within the U.S. (Two bags fit nicely in one USPS Flat Rate Box). Extra charges
apply for Alaska, Hawaii, and Puerto Rico.

We'll deliver your item(s) FREE in the Los Angeles area when you order a minimum of one dozen tamales or participate in
Guer-rilla Delivery.
La Guera Tamalera is committed to bringing you a quality product shipped in a timely manner. However, we are not responsible
for delayed deliveries due to weather or other factors beyond our control. For frozen goods, customers should schedule their
delivery where it can be received on a weekday. We ask that you notify the recipient of the delivery date and arrange for someone
to be available to receive the order.
We are not responsible for packages lost or stolen after delivery confirmation is received from the carrier, nor are we
responsible for incomplete or incorrect delivery information submitted by the ordering customer. In such cases, additional
charges may apply to correct shipping information.
We do not ship on holidays nor allow for delivery the day of a holiday.

CAN I MIX-AND-MATCH FLAVORS? Yes!
CAN I ORDER MORE THAN 2 DOZEN TAMALES? We ship in quantities of 1 dozen, 1½ dozen, and
2 dozen. Larger quantities require additional shipping containers and will be charged accordingly.
HOW DO TAMALES / PREPARED MASA ARRIVE? Frozen and packed with dry ice and reusable gel
packs. Dry ice dissipates during shipping, but if there’s any left when you open the box, DO NOT TOUCH IT
WITH YOUR BARE HANDS. It freezes items at 109 degrees below zero and will burn you if touched without
gloves. Tamales are pre-cooked and simply need to be reheated to enjoy. See reheating instructions below.
CAN I BUY RAW/UNCOOKED TAMALES? Yes, but we really only recommend this for experienced
tamaleros. Steaming uncooked tamales can take anywhere from 30-90 minutes depending on your
stove/steaming equipment.
THAWING INSTRUCTIONS
Tamales: For best results, put your tamales in the refrigerator overnight to bring the temperature up to normal
before steaming. The dry ice they’re packed with freezes them to –109 degrees, which is about 109 degrees
colder than your kitchen freezer.
Prepared Masa will be rock-hard out of the box and needs to be thawed completely before using. Store in
refirgerator overnight, remove from fridge and let thaw for a couple of hours before using. Break it up and knead
it as it thaws. It will be ready to use when it’s the consistency of PlayDough. Be sure to knead it thoroughly
before using; the ingredients tend to separate during the thawing process. Don't worry, the masa is gluten-free
and cannot be over-kneaded.
REHEATING INSTRUCTIONS: These are general guidelines for reheating cooked tamales. Reheating
times will vary depending on your stove, steaming equipment, and the number of tamales you’re preparing.
Steaming: You can use a traditional vegetable steaming basket, bamboo steamer, pasta steamer, seafood
steamer, etc. The more water you can get to boil under your tamales, the better. For best results and fastest
steaming time, we recommend La Guera Tamalera’s home tamale steamer ($29).
Do not remove the paper wrapping or the husks before steaming. (If you remove the paper, it’s not the end of
the world, but the husks must stay on.) Add water to your pot to a level safely below the bottom of your steaming
basket. Let the water reach a full rolling boil before placing your tamales in the basket. Cover the pot, and be
mindful of adding more water as it evaporates. Steam until tamales are heated all the way through (15-20
minutes for frozen tamales, 8-12 minutes for thawed, refrigerated tamales). Be careful! Over-steaming will
result in a tougher or drier masa.
In the microwave: Do not remove the husks. Place tamales in a covered, microwave-safe dish or plastic bag
(folded closed) with a tablespoon of water and cook on high for 1-2 minutes (or 3-4 minutes if frozen). We do
not recommend microwaving more than four tamales at once.
HOW DO I KNOW WHEN MY TAMALES ARE DONE? Your tamales will be done when they have the consistency
of the fleshy part of your palm at the base of your thumb. Over-steaming will yield a tougher or drier masa.
HOW DO I STORE MY TAMALES / HOW LONG WILL THEY KEEP? Freeze tamales for up to 6 months in Ziplock
freezer bags; double-bag to prevent freezer burn. If you refrigerate them, eat within 4-5 days.
I'M ORDERING PREPARED MASA, BUT I DON'T PLAN TO USE IT RIGHT AWAY. HOW SHOULD I STORE IT?
Keep it double-bagged in the freezer until the day before you want to use it. Put it in the refrigerator overnight,
then take it out several hours before you're ready to make tamales. Break it up and knead it as it thaws. It will be
ready to use when it’s the consistency of PlayDough or softer. Be sure to knead it thoroughly before using; the
ingredients tend to separate during the thawing process. Don't worry, the masa is gluten-free and cannot be
over-kneaded.
